What does the magnetic ring on this key actually do?
The iron retention ring is designed to seat the key on a magnetic reader contact and hold it there, so that reading needs less pressing or aligning. That can matter on outdoor intercom panels and for users who struggle to hold a key steady; actual behaviour depends on your reader, so test a sample.
Does it also work on ordinary, non-magnetic readers?
It is intended to. It is offered as a DS1990A-class key — the magnet is meant only to add mechanical retention on magnetic readers, and on a plain probe it should read like a standard Touch Memory key. Compatibility depends on your reader, controller and firmware; test a sample on your own system before ordering.
